Why Roast-to-Order Beats Coffee That Sits on a Shelf
Most grocery and warehouse coffee is roasted weeks—or months—before you buy it. At Syzygy Coffee in Miami, we do the opposite: we roast within 2–3 business days after you order so the cup you brew still has the clarity, sweetness, and aroma the green coffee promised.
What happens after roast
Freshly roasted coffee releases carbon dioxide (degassing). That gas protects aroma early on and affects how the coffee blooms and extracts. There is a useful window when flavors are vivid and the brew is easy to dial in—then, over time, aromatics fade and the cup flattens.
Shelf-stable inventory is optimized for logistics. Roast-to-order is optimized for your cup.
An SCA-minded approach to quality
Specialty coffee, in the SCA sense, is about measurable quality from origin through roast and brew. Small-batch roasting lets us chase that quality intentionally: even development, clean finish, and profiles that respect origin character instead of masking it with darkness.
