Our roasting process
At Syzygy Coffee, we approach coffee roasting with unmatched precision. Our passion for specialty coffee is matched only by our commitment to quality, from harvest to packaging — so each cup is crafted to deliver a taste that’s truly out of this world.
How we do it
- Working with the coffee farmers — We collaborate with passionate farmers (our “Astronauts”) who share our love for specialty coffee. We start with small green samples, usually 200–350 g, to evaluate each lot.
- Choosing the best green beans — As SCA-informed specialty roasters, we handpick beans for size, moisture, and overall quality before anything hits the roaster.
- Roasting the coffee — Careful heat development caramelizes natural sugars (Maillard reaction) to unlock flavor and tasting notes without burying the origin.
- Cupping the coffee — Every roast is cupped for aroma, flavor, and defects. Only lots that meet our standard move forward.
- Repeat for production — When a sample wins, we order larger lots and re-check quality so every bag matches the cup we approved.
- Roast to order — We roast when you order, so coffee ships at peak freshness — typically days after roast, not months on a shelf.
