What “Syzygy” Means, and Why We Roast for Alignment
In astronomy, a syzygy is a roughly straight line configuration of celestial bodies, an alignment. We borrowed the word because great coffee feels like that: origin character, careful process, and a roast profile that finally line up in the cup.
Alignment, not excess
We don't chase novelty for its own sake, and we don't roast dark, period. The goal is balance: sweetness you can taste, clarity you can follow, and a finish that feels intentional. When all of that lines up, the coffee feels “in syzygy.”
