Pour-Over Clarity: A Simple V60 Routine for Fresh Light Roasts

Fresh light and medium-light roasts shine in a clean pour-over. This simple Hario V60 routine is built for Syzygy Coffee beans roasted to order in Miami—especially when you brew within a few days of the roast date.

What you need

  • Hario V60 (01 or 02) and paper filter
  • Gooseneck kettle
  • Scale and timer
  • Fresh whole-bean Syzygy coffee
  • Burr grinder

Starting recipe

  • Ratio: 1:16 (e.g. 18 g coffee → 288 g water)
  • Water: 93–96°C (about 200–205°F), filtered if possible
  • Grind: medium-fine, like table salt—adjust finer if weak, coarser if bitter or slow
  • Total brew time: about 2:45–3:30

Step-by-step V60 routine

1. Rinse and preheat

Place the filter in the V60, rinse thoroughly with hot water, and discard the rinse water. This removes paper taste and warms the dripper and cup.

2. Dose and grind

Weigh your beans, grind fresh, and level the bed. Make a small well in the center for an even bloom.

3. Bloom (0:00–0:45)

Pour about 2× the coffee weight in water (e.g. 36 g for 18 g coffee). Gently swirl or stir to wet all grounds. Wait ~30–45 seconds. Fresh roast-to-order coffee often blooms vigorously—that’s a good sign.

4. First pour (to ~60% of total water)

Pour in slow, concentric circles from the center outward, keeping the water level steady. Aim to reach roughly 60% of your total brew water by ~1:30–1:45.

5. Finish pour and drawdown

Continue pouring to your target weight. Give a gentle swirl to flatten the bed, then let it drain. Target finish around 2:45–3:30. If it finishes much faster, grind finer; if it stalls, grind coarser.

Freshness tip for Syzygy light roasts

We roast within 2–3 business days of your order. For peak clarity and aroma, brew within the first couple of weeks—and if you can, enjoy that first cup in the first few days after arrival while the roast is still singing.

Dialing in

  • Sour / sharp: grind finer, or raise water temp slightly
  • Bitter / dry: grind coarser, or shorten contact time
  • Thin: tighten ratio (try 1:15) or grind a touch finer
